- To Make the filling, Heat oil in a pan.Add mustard and cumin fennel seeds roast till it begin to crackle.Add ginger and chilli to fry. Add potato,onions, and peas (mater)cook till it softens properly. Add besan,to the mixture with red chilli powder haldi /Turmeric powder, black pepper powder,salt and mint leaves and mix thoroughly. Set aside the filling to cool down slightly..
- Scoop out tomatoes by removing all the pulp.Save pulp for making gravy..
- Fill the tomatoes with the prepared stuffing. Cook the tomatoes in microwave for 2-3 minutes,till they are soften and remains in their shape..
- To make the gravy, Heat oil in a pan. Roast cumin seed till they start. to cracker. Add the pulp of tomatoes that we had set aside before and cook for 1-2 minutes than add leftover stuffing Of tomatoes, red chilli, haldi coriander powder sugar,salt and water to thicken the gravy..
- Time to serve,.
- Plate tomatoes first and than put gravy on it, Garnish with coriander and serve hot to our beloved family…
