  1. Boil potatoes until soft.
  2. While the potatoes boil, break 2 eggs, add sliced onions and scotch bonnet and make well seasoned scrambled eggs with them.
  3. Cut out the brown sides of breads then use a rolling pin to smoothen them out. Sprinkle very little amount of water on them and keep aside.
  4. Remove skin off boiled potatoes and mash them.
  5. Mix scrambled eggs with mashed potatoes, season as required.
  6. Mix 2 tablespoons flour with a teaspoon of water and keep aside.
  7. Break the other 2 eggs (3 if they're small), season moderately.
  8. Place mashed potato mix on one end of bread (all the way through the length of the bread) and roll gently.
  9. Smear little amount of flour and water mixture at the end of the rolls to ensure adhesion. They should look like this.
  10. Dip in spiced eggs and fry (oil shouldn't cover them completely) on medium to low heat. They're done when they turn golden brown.
