- Prepare of 30x25 cm pan.

- Prepare 1 cup of nuts (I used hazelnuts, almonds & nuts).
- Take 400 gr of softened butter.
- Make ready 100 gr of sugar.
- You need of Vanilla extract.
- You need of Zest of 1 lemon.
- You need 400 gr of APF.
- You need 1 tbsp of baking powder.
- Prepare of Cold water (as needed).
- You need of >>> For the FILLING.
- Take 1.5 of k whole-milk ricotta.
- You need 300-350 gr of sugar (approx.).
- Prepare 5 of eggs.
- Prepare of Zest of 2 lemons.
- It’s of Vanilla extract.
You can also make ricotta cheese at home by separating the whey from whole milk.Regarding the sweetness: Generally, ricotta pies are not very sweet, and contain only about half the sugar of a traditional cheesecake.An Italian cheese pie made with ricotta cheese and little bites of chocolate with a hint of orange.The lattice crust on top makes it pretty also.

- To make the crust, process the nuts with the butter, sugar, essence and zest. Add the flour mixed with the baking powder and add enough water to form a tender dough, which you MUSTN'T KNEAD TO NOT DEVELOPING THE GLUTEN. Then wrap it in film and take it to the refrigerator for at least 1 hour. Roll it to 1/8 inch thickness to fit a 30x20 cm pan..
- Mix all the filling ingredients and pour it over the crust..
- Place into preheated oven (350F) and bake it during 45 or 60 minutes (will depend on each oven). The pie will be done when the center is slightly jiggly..
