Ingredients of Vegetable Lasagna

  1. It’s of olive oil.
  2. It’s of zucchini thin sliced.
  3. Take of thinly sliced onion.
  4. Take of crushed tomatoes.
  5. Prepare of salt.
  6. It’s of lasagna noodles.
  7. Make ready of normal cheese.
  8. Take of mozerella cheese.

Vegetable Lasagna step by step

  1. Heat 1 1/2 teaspoons oil in a non-stick pan on medium-high..
  2. Add half of zucchini cook 3 minutes on each side or until browned..
  3. Remove from pan..
  4. Repeat procedure with 1 1/2 teaspoons oil and remaining zucchini..
  5. Add remaining 1 tablespoon oil to pan..
  6. Add onion and mushrooms; cook 6 minutes. Stir in spinach and garlic.cook 1 minute..
  7. Remove pan from heat..
  8. Spread mushroom mixture in bottom of pan top with cooked zucchini..
  9. Pour 2 cups tomatoes over zucchini top with salt..
  10. Arrange noodles over top..
  11. Ends as needed to fit in pan..
  12. Spread remaining tomatoes over pan top with cheese..
  13. Cover, and simmer 20 minutes over medium-low or until noodles are done..
  14. Remove pan from heat..
  15. Preheat broiler with oven rack in top position..
  16. Sprinkle mozzarella over pan; broil 3 minutes or until melted and lightly browned..
  17. Sprinkle some of tomatoes capsicum chilli flaxes over it..
  18. I have done same procedure in microwave oven..
