  1. Make ready 1 cup of basmati rice, washed until the water is clear.
  2. It’s 2 cup of vegetable broth.
  3. Prepare 2 of medium-sized zucchini, cubed.
  4. It’s 1 of big tomato, cubed.
  5. It’s 1 of bell pepper, cubed.
  6. Prepare 1 of medium-sized eggplant, cubed.
  7. Prepare 1/2 of onion, cubed.
  8. Make ready 3 of garlic, crushed and minced.

  10. Take 2 tbsp of oil (I normally use sunflower).
