Ingredients of Egg Curry with Cauliflower

  1. Prepare 3-4 tbsp of vegetable oil.
  2. You need 1/2 tsp of mixture of spices (Halba campur).
  3. You need 4 cloves of garlic, minced.
  4. Make ready 1 of -inch ginger, minced.
  5. Prepare 1 of medium onion, sliced.
  6. Take 1 of medium tomatoes.
  7. Make ready 2 of stems of curry leaves.
  8. Prepare 1 tbsp of fish curry powder.
  9. It’s 1/2 tsp of turmeric powder.
  10. Prepare 1 cup of water.
  11. It’s 1 teaspoon of salt.
  12. It’s 2 of medium potatoes.
  13. You need 2 of birds eye chilli (to taste preference).
  14. It’s 1 cup of tamarind juice.
  15. Prepare 1 1/2 cup of thin coconut milk.
  16. Take 1/2 of cauliflower cut in to florets.
  17. Prepare 3 of eggs.

  19. It’s 1 cup of F&N evaporated milk (low fat),.

  22. It’s 1 stalk of curry leaves,.

  24. Make ready 1/2 cup of thin coconut milk,.
  25. Prepare 1/4 tsp of turmeric powder,.

Egg Curry with Cauliflower instructions

  1. Heat oil in a pot. Add mixture of spices. When mixture of spices splutter, add minced garlic, ginger, onion, tomatoes and curry leaves..
  2. Saute ingredients till it turns light brown. Then add the fish curry powder and turmeric powder. Give it a stir and add water..
  3. Stir well and add salt. Let oil separates. You can add potatoes while waiting for the oil separates..
  4. Once oil seprates, can add tamarind water and coconut milk..
  5. Let it boil till gravy gets thick. Then add cauliflower and birds eye chilies..
  6. Next add the mixed ingredients in to the boiling gravy and bring to boil again..
  7. Then break an eggs and drop it directly and gently, into the curry. Repeat this for other eggs and make sure to leave some space between the eggs..
  8. Do not stir gravy. Cover and let the eggs get cooked in medium heat until it fully cooked..
  9. The tasty curry can be served 30 minutes later..
