  1. Take 300 g of shrimp.
  2. It’s 1 of squid (cut like a ring).
  3. Prepare 200 g of oyster mushroom.
  4. It’s 1 of shallot (sliced).
  5. It’s 1 of galangal (cut thin round).
  6. It’s 2 of lemongrass (bottom half and pounded).
  7. Take 2 of kaffir lime leaves (tear).
  8. Prepare 2 of Coriander roots (clean and pounded).
  9. Make ready of Coriander leaf (garnish).
  10. You need 3 tbsp of lime juice (or more).
  11. Prepare 2 tbsp of Tom yum chilli paste.
  12. Take 1 tbsp of fish sauce.
  13. You need of Salt.
  14. It’s of Sugar.
  15. Make ready 5 cups of water.
  16. Make ready of Cooking oil.

Tom Yum Seafood step by step

  1. Clean, peel and devein the shrimp. (Don't throw the shell and the head).
  2. Heat 1 tbsp oil, sauté the shell and the head until it turns red..
  3. Add 5 cups of water, boil and let it simmer (min. 15 minutes)..
  4. Remove the shell and the head from the soup..
  5. Add shallot, galangal, lemongrass, coriander roots and kaffir lime leaves. Simmer for 5 minutes..
  6. Add Thai chilli paste, fish sauce, and mushrooms..
  7. Adjust the soup taste with salt and sugar..
  8. Add the shrimp and squid. Cook just until done (30 sec-1 minute)..
  9. Off the heat and add the lime juice. Ready to serve with coriander leaf as the garnish..
