Ingredients of Oats-Mango Muffins

  1. You need 3/4 cup of All-purpose flour/Maida.
  2. You need 1/4 cup of Quick-cooking oats.
  3. You need 1/4 cup of Raisins.
  4. You need 1/4 tsp of Salt.
  5. Make ready 1/2 tsp of Baking soda.
  6. It’s 1 1/4 tsp of Baking powder.
  7. You need 1/2 tsp of Cardamom powder.
  8. You need 1/2 cup of Brown or White caster sugar/Powdered sugar.
  9. Make ready 1/4 cup of Vegetable oil.
  10. Prepare 1 medium sized of Mango pulp of ripe mango.
  11. Prepare 6 tbsp of Milk.
  12. Take of Rolled Oats for sprinkling on top.

Oats-Mango Muffins step by step

  1. Peel and cut the mango into pieces. Add the mango pieces in a food processor and blitz until smooth. Keep aside..
  2. Preheat the oven to 170° C. Line a muffin tin with paper liners..
  3. In a bowl add flour, sugar, baking powder, baking soda, cardamom powder, and salt, mix well. Add milk, mango pulp, and vegetable oil into this. Whisk well until smooth batter forms..
  4. Fold in raisins and oats into the batter..
  5. Scoop the batter into the prepared muffin tin about three fourth full, sprinkle rolled oats on top and bake for 35-40 minutes or until a toothpick inserted in the centre comes out clean..
  6. After baking transfer the muffins onto a cooling rack and leave there until they cool completely. Store them in an airtight container, keep refrigerated and consume within 3-4 days..
